Mango Brownie Cheesecake

INGREDIENTS
Brownies:
- 100 g flour
- 150 g butter
- 200 g of
- 3 eggs at room temperature
- 180 g dark chocolate, finely chopped
- Pinch of salt
Mango mounds:
- Half a can Alphonso mango pulp without added sugar QF Quality Food
- 125 g or 1/2 cube of semi-fat cottage cheese
- Lemon juice
- 1 tablespoon potato starch
- 1 egg
A METHOD OF PREPARING
- Melt the butter in a saucepan and remove from the heat. Add the chocolate and stir until melted. Set aside to cool.
- Crack the eggs into a bowl, add salt, and sugar. Beat for a few minutes until light and fluffy. Next, pour in the melted chocolate and butter, followed by the sifted flour. Mix slowly until all ingredients are combined.
- Grease the baking tray (mine is 32x24, but smaller is better, as the cake will turn out higher) and line it with parchment paper.
- Blend all the ingredients for the mango mounds. Pour the chocolate layer onto a baking sheet and make indentations with a spoon. Pour the mango cheese layer over the top and, optionally, crumble a little chocolate on top.
- Place in a preheated oven - 185'C fan for about 35 minutes.
- Once baked, remove and let cool. The more crumbly the filling, the better. After cutting into pieces, you can decorate each one with the remaining mango pulp, spreading it on top.
